Crab & leek golden pasties

  • 500g puff pastry
  • 25g of butter
  • 150g leeks, thin sliced
  • Some saffron strands
  • 300g crab meat
  • A roughly chopped bunch of parsley
  • 50g fresh white breadcrumb
  • 1 lemon juice
  • 1 egg


1. Heat the oven to 220F.

2. Start with the pastry, Roll The pastry on a lightly floured surface. Cut round a plate to make four 20cm circles and put in the fridge for 12 min.

3. Melt some amount of butter in a pan. Cook the leeks for 4 to 5 minutes until turns soft. Take saffron, Soak the saffron in 1 table spoon of boiling water around 3 minutes.

4. Cook the leeks with the saffron and socking liquid for 1-2 minute.

5. Take white or brown crab meat in a medium size of the bowl, add parsley, breadcrumbs, lemon juice and zest with some seasoning.

6. Time to fill the pastry. Divide the mix in 4 part for 4 pastry circles, fill it one-half of the pastry.

7. Brush the pasties with egg and bake for 30 min until golden brown. Serve with extra lemon wedges in room temperature.
