Char Grilled Razor Clams

Enjoy the tender and juicy razor clams.
Ingredients:
- 10 large razor clams
- 1 table spoon of crushed roasted peanuts
- 1 sliced chili (Bird’s eye)
- 1 table spoon of sea salt
- 1/2 table spoon finely ground white pepper
- 1 tbsp lime juice
Method:
- Soak clams in salted water and black pepper for around 25 minutes. This will push the clams to spit out sand. Repeat this process until done.
- Take a mortar and pestle and pound the chili and coriander together to make the dressing.
- Add this paste with remaining ingredients in the medium size bowl and mix it well.
- Heat a pan to high temperature. Chargrill all the clams for 5 minutes. After they open to continue to grill them for more 2 minutes.
- Sprinkle crushed peanuts, garnish with the chili and serve with the steamed rice.
